This little community located 25 kms from Loja is well famous for its comfortable weather and the good excuse to get off the road to enjoy perhaps the best typical Lojan dishes.
About fifteen years ago, these side road restaurants started to attract tourist and locals as well for its preparations. Here some:
Arveja con guineo./ Green peas with green plantains:
It’s prepared with green plantain, dried peas, quesillo, and fine chopped cilantro, mostly served with avocado..
Pork Stew / Sancocho de Chancho:
Traditional soup in which pork is first cooked, then yucca is added to the caldo, also green plantain, cabbage and arrocillo, a smaller kind of rice.
Fritada de Chancho con orejitas / Skinned Fry pork, served with the pork ears:
Pork ribs fried in orange juice with garlic, onions, served with skin pieces, white corn, fried plantains, tomato and onion rings in lime juice. |
